What’s the difference between “heavy duty” and “extra heavy duty” mayonnaise?

Is “extra heavy duty” mayonnaise thicker? Tangier? Eggier? Oilier? I need to know.

  • It has extra egg yolks so it is more viscous and food releases less water. If you want to serve a duck made of tuna fish salad, you'd want to use extra heavy duty mayonnaise, and probably seek professional help.
